We usually use this journal to talk about 48-hour fermentation, Italian flour sourcing, and the science of the perfect crust. But after a year of watching thousands of our signature green boxes hit the tables, we’ve come to a different kind of conclusion.

We need to talk about commitment issues.

It has been exactly one year since we introduced the Tasting Menu (originally our "Mini Pizza" concept). In that time, we’ve watched the same struggle play out at tables every single night.

At Crust, we decided to break the rules. We believe you should be allowed to explore. You should be allowed to change your mind.

It was cool to see that even amidst the chaos of daily vlogging, the lesson we learned this year holds up: good food is the only thing that stops the talking and starts the sharing.
